Ingredients
Serves 6
- 5 tbsps. unsalted butter
- 3 tbsps. all-purpose flour
- 2 cups whole milk
- 1 cup grated Gruyere cheese
- 1/2 cup grated Parmesan
- salt and freshly ground black
- pepper to taste
- 1/2 tsp freshly grated nutmeg
- 12 (1/2-inch-thick) slices bread, toasted to golden brown
- 6 tsps. Dijon mustard
- 12 thin slices ham
- 6 large eggs
Method
- Melt 3 tbsps. butter in a medium saucepan over medium-high heat. Add the flour and whisk until smooth, about 1 minute. Whisk in the milk and bring to a boil. Reduce heat to a simmer and cook until mixture is thickened, about 6-8 minutes. Remove from the heat and stir in 1/2 cup grated Gruyere and the Parmesan until smooth. Season with salt and pepper and stir in the nutmeg. Set the sauce aside.
- Preheat the broiler to high and set the rack 3-4 inches from the heat.
- Place 6 slices toasted bread on the baking sheet, and spread 1 tsp mustard over each
- top each with 2 slices ham
- divide the remaining gruyere among the 6 pieces
- broil until cheese is melted, about 1-2 minutes
- top with remaining bread slices, then evenly pour the sauce on top of each sandwich
- broil until cheese sauce is bubbling and evenly browned, about 2-3 minutes, and remove from the oven
- Melt the remaining 2 tbsps butter in a large skillet over medium heat
- Add eggs and lower the heat
- Season with a pinch of salt and pepper and continue to cook over low heat until the whites become opaque, about 2 minutes
- Turn the eggs and cook for 1 minute longer
- Place an egg on top of each sandwich to serve
