Mint Berry Salad Recipe

Ingredients

For the citrus mint syrup

  • juice of 2 oranges
  • 1/2 cup water
  • 1/4 cup coconut sugar
  • 5 fresh mint leaves, chopped
  • 1 teaspoon vanilla extract (optional)
  • 1/4 teaspoon (1 g) stevia in the raw (for extra sweetness) (optional)

For the salad

  • 3 cups fresh berries such as blueberries, strawberries (halved), or blackberries (mix and match your favorites)

Method

  1. In a bowl, combine the orange juice, water, sugar, mint leaves, vanilla extract (if using), and stevia (if using)
  2. Place a nonstick skillet over medium-low heat, pour in the syrup ingredients, and bring to a simmer
  3. Cook for 5 to 7 minutes, or until the liquid reduces by half, then remove it from the heat to allow it to thicken and cool to room temperature
  4. Pour the syrup into an airtight jar and place in the fridge to chill for at least 1 hour
  5. I like to keep the pieces of chopped mint in the syrup while it chills to infuse it with more mint flavor; however, you can remove them if you’d like
  6. Toss the berries together in a bowl, then pour the syrup over the berries
  7. Fold the berries into the syrup, then chill for 1 hour before serving
  8. Store the berries in an airtight container in the fridge for up to 5 days
  9. Repeat
  10. If you are not going to eat the salad within 5 days, divide the salad and syrup into individual portions in an ice cube tray and freeze
  11. Add the ice fruit cubes to your smoothies for a boost of flavor
