Ingredients
- 3 tbsp butter, melted
- 3 tbsp flour
- 1 C. milk
- 4 eggs, separated
- 2 1/2 C. diced asparagus
- 3/4 tsp salt
Method
- Set your oven to 325 degrees F before doing anything else and grease a casserole dish
- In a pan, mix together the melted butter and flour
- Slowly, add the milk, beating continuously until thickened
- Remove from the heat and keep aside
- In a bowl, add the egg yolks and beat until thick and lemon colored
- Add the asparagus and salt and stir to combine
- Add the asparagus mixture into the sauce and stir to combine
- In another bowl, add the egg whites and beat until stiff
- Gently, fold the whipped egg whites into the asparagus mixture
- Place the mixture into the prepared casserole dish
- Arrange the casserole dish in a roasting pan with hot water and cook in the oven for about 45 minutes
