Lemon Raspberry Souffle Recipe

Ingredients

  • 1 1/2 C. raspberry puree
  • 2 tbsp sugar
  • 4 egg whites
  • 1/4 tsp lemon juice
  • 1 tbsp sugar, for ramekins

Method

  1. Set your oven to 400 degrees F before doing anything else and lightly, grease 4 ramekins
  2. Then sprinkle each ramekin with sugar
  3. In a blender, add the raspberry puree and 1 tbsp of the sugar and pulse at medium speed for about 1 minute
  4. Transfer the mixture into a large bowl
  5. In a bowl, add the egg whites, sugar and lemon juice and beat until stiff and fluffy
  6. Gently, fold the egg whites into the raspberry mixture
  7. Divide the mixture into the prepared ramekins evenly
  8. Cook in the oven for about 12-15 minutes
  9. Remove from the oven and serve immediately
