Ingredients
- 4 potatoes, peeled and cut into chunks
- 1 leek, cleaned and sliced
- 1 1/2 C. hot water
- 1/2 tsp salt
- fresh ground pepper
- 2 tbsp nonfat milk
Method
- In a pan, add the potatoes and enough water to cover and bring to a boil
- Reduce the heat and simmer for about 10 minutes
- Drain the potatoes, reserving 1/4 C of the cooking liquid
- Heat a medium, greased nonstick skillet over medium-high heat and cook the leek, hot water, salt and pepper until all the liquid is absorbed, stirring occasionally
- With a potato masher, mash the potatoes into a bowl
- Add the milk and the reserved cooking liquid, one tbsp at a time and mix until fluffy
- Stir in the cooked leek
- Transfer the mixture into a greased 1-quart souffle dish and keep aside, covered up to 2 hours
- Set your oven to 450 degrees F
- Cook, uncovered in the oven for about 30 minutes
