Pretzel Peanut Butter Cheesecake Recipe

Ingredients

Crust:

  • 1 1/2 cups crushed pretzels
  • 1/3 cup butter, melted

Filling:

  • 5 (8 oz.) packages cream cheese, softened
  • 1 1/2 cups sugar
  • 3/4 cup creamy peanut butter
  • 2 teaspoons vanilla extract
  • 3 eggs, lightly beaten
  • 1 cup peanut butter chips
  • 1 cup (6 oz.) semisweet chocolate chips

Topping:

  • 1 cup (8 oz.) sour cream
  • 3 tablespoons creamy peanut butter
  • 1/2 cup sugar
  • 1/2 cup finely chopped unsalted peanuts

Method

  1. Preheat oven to 350F
  2. In a medium bowl, combine pretzels and butter
  3. Press into the bottom and 1 inch up the sides of a greased 9 inch springform pan
  4. Bake for 5 minutes
  5. In a large mixing bowl, beat together cream cheese and sugar until smooth
  6. Mix in peanut butter and vanilla
  7. Add eggs until just combined
  8. Stir in both chips
  9. Pour into the crust
  10. Bake for 50 to 55 minutes, until center is almost set
  11. Remove from oven to cool for 15 minutes
  12. Meanwhile, in a small bowl, combine sour cream, peanut butter and sugar
  13. Spread over cheesecake and sprinkle with nuts
  14. Bake for 5 additional minutes
  15. Cool completely, cover and chill overnight
