Pineapple Upside Down Cheesecake Recipe

Ingredients

Cake Layer:

  • 1 cup white sugar
  • 1/3 cup butter, softened
  • 1 egg
  • 1/2 teaspoon vanilla
  • 3/4 cup milk
  • 1 1/3 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt

Pineapple Layer:

  • 1/4 cup butter
  • 2/3 cup packed brown sugar
  • pineapple rings.
  • maraschino cherries.

Cheesecake Layer:

  • 3 (8 oz) packages cream cheese, softened
  • 3/4 cup sugar
  • 1 teaspoon vanilla
  • 3 eggs
  • 1/2 cup sour cream

Method

  1. Preheat oven to 325F
  2. In a large mixing bowl, cream together sugar, butter, egg and vanilla
  3. Gradually add in flour, baking powder and salt
  4. Mix in milk until smooth
  5. Pour batter into a greased, 9 inch springform pan
  6. In a small saucepan, melt butter with brown sugar and combine well
  7. Drop small spoonfuls over batter until covered
  8. Layer pineapple rings over top and place one cherry in each ring
  9. Bake for 25 minutes
  10. Meanwhile, in a large mixing bowl beat together cream cheese, sugar and vanilla until smooth
  11. Add in eggs one at a time until just combined
  12. Fold in sour cream
  13. Pour over top of pineapple layers
  14. Bake an additional 55 minutes
  15. Cool in unheated oven for 5 minutes with door ajar
  16. Cool, cover and chill overnight
  17. Garnish suggestion – whipped topping and cherries
