Ingredients
For Crust:
- 2 cups finely chopped walnuts
- 1/3 cup brown sugar
- 3 tablespoons melted butter
- 2 cups pureed persimmons
- 3 (8 ounce) packages cream cheese, softened
- 1 1/4 cups white sugar
- 3/4 cup sour cream
- 1/4 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 6 eggs
For Topping:
- 1 1/4 cups sour cream
- 3 tablespoons white sugar
- 1 teaspoon vanilla extract
Method
- Preheat oven to 325F
- In a large bowl, combine walnuts, brown sugar and butter
- Press into the bottom of a 9 inch springform pan
- Bake for 12 minutes
- In a food processor, combine persimmons, cream cheese, sugar, sour cream, cinnamon and ginger and process until smooth
- Add in eggs one at a time and pulse until just combined
- Pour mixture into crust
- Bake 65 to 75 minutes, until almost set
- In a medium bowl, whisk together sour cream, sugar and vanilla
- Spread evenly over cheesecake
- Bake an additional 10 minutes
- Cool, cover and refrigerate overnight
