Ingredients
- 2 tablespoons pistachios
- 1/2 cup graham cracker crumbs
- 3 tablespoons butter, melted
- 1 (8-ounce) package cream cheese plus 1 (3-ounce) package, softened
- 1 (4-ounce) package goat cheese, softened
- 1/3 cup honey
- 2 large eggs
- 1/2 teaspoon grated lime zest
- 1 tablespoon lime juice
Method
- Preheat oven to 325F
- Add pistachios to a food processor, and pulse until finely chopped
- Add graham cracker crumbs and butter until well blended
- Press mixture evenly into the bottom of 12 greased muffin tin cups
- Bake for 5 minutes and cool
- Lower oven to 300F
- In a large mixing bowl, beat cream cheese and goat cheese until smooth
- Add honey and eggs, one at a time until just combined
- Stir in lime zest and juice
- Pour into muffin cups
- Place muffin tin in a baking pan filled with 1/2 inch of water
- Bake for 25 minutes, until centers are just set
- Cool, cover and chill overnight
- Garnish suggestion – whipped topping and fresh strawberry slices or raspberries
