Lime And Goat Cheese Mini Cheesecakes Recipe

Ingredients

  • 2 tablespoons pistachios
  • 1/2 cup graham cracker crumbs
  • 3 tablespoons butter, melted
  • 1 (8-ounce) package cream cheese plus 1 (3-ounce) package, softened
  • 1 (4-ounce) package goat cheese, softened
  • 1/3 cup honey
  • 2 large eggs
  • 1/2 teaspoon grated lime zest
  • 1 tablespoon lime juice

Method

  1. Preheat oven to 325F
  2. Add pistachios to a food processor, and pulse until finely chopped
  3. Add graham cracker crumbs and butter until well blended
  4. Press mixture evenly into the bottom of 12 greased muffin tin cups
  5. Bake for 5 minutes and cool
  6. Lower oven to 300F
  7. In a large mixing bowl, beat cream cheese and goat cheese until smooth
  8. Add honey and eggs, one at a time until just combined
  9. Stir in lime zest and juice
  10. Pour into muffin cups
  11. Place muffin tin in a baking pan filled with 1/2 inch of water
  12. Bake for 25 minutes, until centers are just set
  13. Cool, cover and chill overnight
  14. Garnish suggestion – whipped topping and fresh strawberry slices or raspberries
