Pina Colada Cheesecake Recipe

Ingredients

CRUST:

  • 15 shortbread cookies, crushed
  • 1 cup flaked coconut, toasted
  • 3 tablespoons butter, melted

FILLING:

  • 3 packages (8 ounces) reduced-fat cream cheese
  • 3/4 cup sugar
  • 3/4 cup cream of coconut
  • 3 tablespoons 2% milk
  • 3/4 teaspoon rum extract
  • 3 eggs, lightly beaten

TOPPING:

  • 1/2 fresh pineapple, peeled and cored, thinly sliced
  • 3 tablespoons apple jelly, warmed

Method

  1. Preheat oven to 325F
  2. In a large bowl, combine crushed cookies, coconut and butter
  3. Press into the bottom of a 9 inch springform pan
  4. Bake for 8 minutes
  5. In a large bowl, beat cream cheese and sugar until smooth
  6. Add in cream of coconut, milk and rum extract
  7. Beat in eggs until just combined
  8. Pour into crust
  9. Place springform pan into baking pan filled with water
  10. Bake 80 to 90 minutes, until center is just set
  11. Cool, cover and chill overnight
  12. Brush warm apple jelly over pineapple slices
  13. Chill 1 hour
  14. Garnish suggestion – edible flower petals
