Air Fryer Crustless Cheese Quiche
Really flexible dish with any veg to hand and any mix of cheeses. Don’t worry about quantities too much. Too much liquid will take a little loner to cook and be a little softer.
Ingredients
Veggies
- 1 tablespoon oil
- Onions, chopped
- Peppers, chopped
- Mushrooms, sliced
- 1 tablespoon butter
- 4 or 5 cherry tomatoes, halved (topping)
Egg Cheese Mix
- 3 large eggs
- Soft cheese, to taste
- Hard cheese, cut into cubes
- Milk (only if mix too dry)
- Salt and Pepper to taste
- Grated cheddar for topping
Method
- Preheat oven to 350F (180c)
- On a high heat fry the onions quickly. This is personal taste, anything from just sweating them to turning them brown or caramelized.
- Turn off the heat.
- Add the peppers and stir for a minute or so
- Add the mushrooms and butter , stir as the butter melts and remove from heat
- Beat the eggs and soft cheese and fold in the crumbled cheese
- Fold in the cooling vegetables
- Pour into greased pan, hot from preheat
- Bake uncovered for 10-15 minutes or until set *
- 3 minutes into cooking, quickly add the grated cheese and tomatoes to the top and return to air fryer
* A large shallow dish will cook quickly, a small deep dish needs a bit longer
I use a large dish as I am impatient 🙂 It’s round and a bit too big but squashes into a square shape
Tip: Silicone dishes bend like a round peg in a square hole
