Lemon Bar Cookies Recipe

Ingredients

  • Serving Size : 1
  • 2 cups flour
  • 1 cup confectioners sugar
  • 1 Cup oleo
  • 1/2 teaspoon salt
  • 4 Eggs – well beaten
  • 1 3/4 cups sugar
  • 1/2 cup lemon juice
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons flour
  • 1 cup coconut

Method

  1. Mix 2 cups flour, confectioners sugar, oleo, and 1/2 tsp salt with pastry blender.
  2. Pat mixture into a 9 x 13 pan.
  3. Bake at 350 degrees for 20 minutes.
  4. Mix eggs, sugar, lemon juice, salt, baking powder, 2 tbsp flour and coconut well.
  5. Pour over crust.
  6. Bake 15 to 20 minutes.
  7. Cut while warm.
