Ingredients

- 4 Cups Peaches – cut up
- 1/3 Cup Chopped Onions
- 1 Cup Raisins
- 2/3 Cup White Wine Vinegar
- 1/4 Cup Lemon Juice
- 1 Tablespoon Salt
- 4 1/2 Cups Sugar
- 2/3 Cup Brown Sugar
- 1 Small Red Pepper
- 1 Tablespoon Mustard Seed
- 1 Box Certo
- 1 Teaspoon Allspice
- 1/2 Teaspoon Cinnamon
- 1/2 Teaspoon Cloves
- 1/2 Teaspoon Ground Ginger
- 1/4 Cup Preserved Ginger – slivered
- 4 Cups Peaches – chopped
Method
- In large pan add all except spices.
- Stir over high heat to a hard boil.
- At once, stir in sugar and spices.
- Boil hard 5 minutes, stirring constantly.
- Skim and stir 10 minutes.
- Pour into glasses, parawax, 10 medium glasses.
