Vanilla Crepes With Orange Sauce Recipe

Ingredients

  • Serving Size : 8
  • 1 Cup milk
  • 2 tablespoons vanilla extract
  • 1/2 cup sugar
  • 3 tablespoons all-purpose flour
  • 3 Eggs – divided
  • 16 Crepes
  • 2 tablespoons melted butter

Method

  1. Orange sauce – (see recipe)
  2. Scald milk and vanilla.
  3. Set aside.
  4. Combine sugar, flour, and egg yolks.
  5. Stir in milk mixture.
  6. Cook over medium heat, stirring constantly, until mixture comes to a boil.
  7. Cook a few seconds; remove from heat.
  8. Beat egg whites until stiff; fold gently into egg yolk mixture.
  9. Place about 3 tbsp batter on each crepe; roll crepes loosely over batter.
  10. Place on cookie sheet; brush crepes with melted butter.
  11. Bake at 350 degrees for 20 to 25 minutes.
  12. Arrange crepes on platter; serve immediately with Orange sauce.
