Eggplant Sausage Cakes Recipe

Ingredients

  • Serving Size : 1
  • 1 large eggplants – cut in small pieces
  • salted Water
  • 1 Egg – slightly beaten
  • 1 medium onion – grated
  • 1/2 teaspoon poultry season

Method

  1. Salt and pepper to taste
  2. Flour
  3. Slice and cut eggplants and cook in boiling salted water until tender.
  4. Turn into a strainer and let stand to drain till cool.
  5. In mixing bowl mash eggplant.
  6. Add egg, onion, poultry season and enough flour to bind ingredients together.
  7. Drop batter by spoon into a small amount of bacon drippings and fry on both sides to brown.
  8. This has a sausage taste.
