Scalloped Eggplant Recipe

Ingredients

  • Serving Size : 1
  • 1 Eggplant
  • 1/2 cup water
  • 1/4 cup butter
  • 1/2 cup bread crumbs
  • 1/2 tablespoon salt
  • 1/8 tablespoon pepper
  • 1/2 tablespoon onion
  • 2 Eggs – well beaten

Method

  1. Peel and chop eggplant.
  2. Cook in water till tender.
  3. Drain.
  4. Add melted butter, soft bread crumbs, eggs, and seasoning.
  5. Pour in buttered casserole dish, sprinkle with buttered bread crumbs.
