Veal Parmigiano Recipe

Ingredients

  • Serving Size : 4
  • 1 pound veal cutlets – thin
  • 3 tablespoons oil
  • 3 cloves garlic – finely minced
  • 1 onion – chopped
  • 2 1/2 cups canned tomatoes
  • 1 1/4 teaspoons pepper
  • 8 ounces tomato sauce
  • 1/4 teaspoon thyme
  • 1 egg
  • 1/4 cup bread crumbs
  • 1/2 cup grated parmesan cheese
  • 3 tablespoons oil
  • 1/2 pound Mozzarella cheese – thinly sliced

Method

  1. In 3 tablespoons hot oil saute garlic and onion till golden – add tomatoes, salt, pepper, break up tomatoes with fork.
  2. Simmer uncovered, 10 minutes .
  3. Add tomato sauce, thyme and simmer uncovered 20 minutes.
  4. Beat egg, combine crumbs, 1/4 cup Parmesan cheese.
  5. Dip each veal piece into egg and then into crumbs.
  6. Saute until golden brown.
  7. Set slices side by side in baking dish (12x8x2).
  8. Heat oven.
  9. Pour 2/3 of tomato mixture over veal.
  10. Put mozzarella on top.
  11. Spoon on rest of tomato mixture.
  12. Sprinkle with 1/4 cup Parmesan cheese.
  13. Bake uncovered 30 minutes.
