Easy Vegetable Tuna Pilaf Recipe

Ingredients

  • Serving Size : 8
  • 2 tablespoons butter or margarine
  • 1/2 cup scallions – chopped
  • 1 package rice,brown – uncooked(12oz)
  • 3 1/2 cups vegetable broth – clear
  • 1 teaspoon salt
  • 1/2 teaspoon tabasco sauce
  • 1/2 cup sunflower seeds – hulled
  • 1/2 cup carrots,diced – pared
  • 1 zucchini – halved/sliced 1/2″
  • 1 1/2 cups broccoli – cubed
  • 3 cans tuna – drained(7oz)

Method

  1. Melt butter in a flameproof 3-quart casserole.
  2. Add scallions and rice; cook, stirring frequently, until rice is golden brown.
  3. Stir in vegetable broth; bring to a boil.
  4. Remove from heat.
  5. Cover and bake in preheated 375:F oven 45 minutes
  6. Remove casserole from oven; stir in salt, Tabasco sauce, sunflower seeds, carrots, zucchini and broccoli.
  7. Return to oven; bake 20 to 25 minutes longer.
  8. Just before serving, mix in tuna.
