Whitefish Recipe

Ingredients

  • Serving Size : 1
  • 1 pound fresh spinach
  • 1/4 cup thinly sliced green onions
  • 2 tablespoons snipped fresh dill weed
  • 1/2 teaspoon salt
  • 1 dash pepper
  • 4 Fillets whitefish
  • 4 teaspoons lemon juice

Method

  1. Salt
  2. Pepper
  3. Paprika
  4. Wash spinach; remove tough stems.
  5. Drain spinach on paper towel.
  6. Leave water that clings to leaves on spinach; chop spinach.
  7. Toss together spinach, onion, dill, salt, and pepper; arrange in 3 quart rectangular baking dish.
  8. Arrange fish on spinach in single layer.
  9. Thick edges of fish should be placed toward outside of dish.
  10. Sprinkle fish with lemon juice and salt and pepper to taste.
  11. Sprinkle with paprika.
  12. Cover; microcook on high 7 to 8 minutes’ until fish flakes easily with a fork.
  13. Turn dish half way through cooking.
  14. Let stand 5 minutes.
  15. Serve with lemon and tomato wedges.
