Ingredients
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 eggs – beaten
- 2 cups sour cream
- 1 cup raisins
- 2 tablespoons lemon juice
- 1 Baked 9-inch pie shell or crumb crust
Method
- In top of double boiler, blend together sugar, cornstarch and salt.
- Combine with beaten eggs, 1-1/2 cups sour cream, raisins and lemon juice.
- Cook and stir over hot water until thick.
- Pour into baked pie shell.
- When cool top with remaining 1/2 cup sour cream.
- Chill several hours.
