Sweet Potato Rolls Recipe

Ingredients

  • Serving Size : 1
  • 1 cup cooked mashed sweet potatoes
  • 3 tablespoons melted butter
  • 1 package dry yeast
  • 1/2 cup warm water
  • 1 egg
  • 1 teaspoon salt
  • 3 tablespoons sugar
  • 5 cups all-purpose flour
  • 3/4 cup warm water

Method

  1. Blend potatoes and melted butter.
  2. Dissolve yeast in 1/2 cup very warm water.
  3. Add to the potatoes.
  4. Add egg, salt and sugar, blend well.
  5. Add flour alternately with 3/4 cup warm water.
  6. Turn out on well floured board and knead until smooth.
  7. Place in greased bowl, turning to grease top, cover, allow to rise for 2 hours.
  8. Place dough on board and roll to desired thickness.
  9. Cut into shapes desired.
  10. Brush rolls with butter.
  11. Let rise for 1 hour.
  12. Bake at 425 degrees for 15 or 20 minutes.
  13. Yield 30 rolls.
