Tempeh Salad Recipe

Ingredients

  • Serving Size : 4

tempeh salad:

  • 1 tablespoon olive oil
  • 2 tablespoon tamari
  • 1 tablespoon cider vinegar
  • 2 garlic cloves – chopped
  • 1 block tempeh – cubed
  • 1 cup spiral pasta
  • 1/4 cup red onion – sliced
  • 1/4 cup celery – sliced diagonally
  • 1/2 cup red bell pepper – sliced into
  • 1/2 cup green bell pepper – diced
  • 1 tablespoon chopped parsley

dressing:

  • 2 tablespoon olive oil
  • 1 tablespoon cider vinegar
  • 1/8 teaspoon oregano
  • 1 garlic clove – crushed
  • 1 tablespoon tamari

Method

  1. SALAD: Mix together the first four ingredients.
  2. Add tempeh and marinate for at least for 1 hour.
  3. Heat olive oil and half the tamari in skillet.
  4. Add tempeh and fry till crispy and brown on the outside.
  5. Cook pasta till al dente.
  6. Toss with remaining ingredients and tempeh and set aside.
  7. DRESSING: Whisk together ingredients and chill.
  8. Add to the tempeh and vegetable mix.
  9. Toss and serve.
