Szechuan Turkey Pasta Salad Recipe

Ingredients

Serving Size : 14

  • 2 pounds angel hair pasta
  • 1/2 pound cooked turkey
  • 1 bunch green onions
  • 1 cup mini corn-on-cobs
  • carrots.
  • 4 tablespoons toasted sesame seeds
  • 1/4 pound snow peas
  • red bell peppers
  • 1 bunch cilantro
  • 1 can water chestnuts – dressing-
  • 2 cups mayonnaise
  • 3/4 cup soy sauce
  • 1 tablespoon Szechuan hot oil – or to taste
  • 1/4 cup sesame oil
  • 1 tablespoon Dijon mustard
  • 2 garlic cloves – or more

Method

  1. Cook pasta until Al Dente.
  2. Dice turkey, bell pepper and peeled carrots.
  3. Drain and slice water chestnuts.
  4. Remove stems from cilantro and use leaves only, saving a few leaves as garnish.
  5. Chop green onions.
  6. Slice mini corn cobs.
  7. Slice snow peas on diagonal into thin strips.
  8. Toast sesame seeds and reserve 1 TBL for garnish.
  9. Toss all ingredients together.
  10. Dressing: Combine all ingredients in food processor and process until well-blended.
  11. Add to salad and toss.
  12. Garnish with toasted sesame seeds and cilantro.
  13. Makes 14 cups.
