Low Fat Tropical Fruit Shake Recipe

Ingredients

  • 1 envelope unflavored gelatin
  • 20 ounces pineapple chunks in juice, drained, juice reserved
  • 1 ripe banana
  • 1 cup nonfat vanilla yogurt, or plain yogurt
  • 2 tablespoons firmly packed light brown sugar
  • 1 teaspoon coconut extract
  • 6 ice cubes, up to 8

Method

  1. In 1-cup microwavable measuring cup, sprinkle gelatin over 1/4 cup reserved juice; let stand 1 minute.
  2. Microwave at High about 40 seconds, or until gelatin dissolves; stir and let stand 3 minutes.
  3. In electric blender, blend remaining reserved juice, pineapple, banana, yogurt, sugar and coconut extract until smooth.
  4. With motor running, gradually add gelatin mixture, processing until blended.
  5. Add ice cubes, one at a time, blending until smooth.
  6. Serve immediately.
  7. Per serving: About 182 calories, 5g protein, 42g carbohydrate, 0g fat, 1% calories from fat, 0mg cholesterol, 46mg sodium, 2g fiber
