Low Fat Tangy Asparagus Linguine Recipe

Ingredients

  • 5 ounces linguine
  • 2 tablespoons reduced-fat margarine
  • 1/4 cup finely chopped onion
  • 3 garlic cloves, minced
  • 8 ounces asparagus, peeled, sliced diagonally into 1/2-inch pieces
  • 2 tablespoons dry white wine
  • 2 tablespoons lemon juice
  • freshly ground black pepper
  • 1/4 cup grated parmesan cheese
  • 3/4 cups reduced-fat shredded mozzarella cheese
  • lemon zest strips, optional

Method

  1. Prepare linguine according to package directions until a dente; drain.
  2. Meanwhile, in large skillet, over medium heat, melt margarine.
  3. Add onion and garlic; saute until onions are soft.
  4. Add asparagus; saute 2 minutes.
  5. Add wine and lemon juice and cook 1 more minute.
  6. Season with pepper to taste.
  7. Remove from heat.
  8. Toss with hot pasta and Parmesan cheese.
  9. Remove to serving platter; top with mozzarella cheese.
  10. Garnish with strips of lemon zest.
  11. Serve immediately.

Makes 4 servings.
