Low Fat Sea Bass And Leeks Recipe

Ingredients

  • 1 1/2 cups sliced leeks with tops, (about 2 medium)
  • 1 pound sea bass or grouper fillets
  • skinned
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons chopped fresh parsley
  • 1/2 cup dry white wine
  • Method

  • Spread leeks evenly in 10-inch nonstick skillet.
  • Cut fish fillets into 4 serving pieces.
  • Place in single layer on leeks.
  • Sprinkle with salt, pepper and parsley.
  • Pour wine into skillet.
  • Heat to boiling; reduce heat.
  • Cover and simmer 12 to 15 minutes or until fish flakes easily.
  • :SERVINGS.
  • :MICROWAVE DIRECTIONS: Decrease wine to 1/4 cup.
  • Spread leeks in square microwavable dish, 8 X 8 X 2 inches.
  • Cut fish fillets into 4 serving pieces.
  • Arrange fish on leeks with thickest parts to outside edges of dish.
  • Sprinkle with salt, pepper and parsley.
  • Pour wine into dish.
  • Cover with waxed paper and microwave on high 8 to 11 minutes, rotating dish 1/2 turn after 4 minutes, until fish flakes easily with fork.
  • Let stand covered 3 minutes.
