Low Fat Quick Oriental Beef Noodle Soup Recipe

Ingredients

  • beef broth, defatted
  • soy sauce
  • grated gingerroot
  • minced garlic
  • frozen sugar snap peas
  • stir-fry mix
  • canned water chestnuts, sliced
  • soba noodles, or whole wheat linguine
  • boneless skinless chicken breast, cut in chunks
  • Method

  • Put defatted broth, a little soy sauce, grated gingerroot and minced garlic in large saucepan and bring to boil.
  • Add frozen sugar snap peas, stir-fry mix and drained canned sliced water chestnuts; return to boil.
  • Add soba noodles or whole- wheat linguine and boneless, skinless chicken breast chunks and cook until noodles are tender and chicken cooked through.
