Low-Fat Sweet-Potato Biscuits Recipe
Ingredients
1 tablespoon shortening
1 cup flour
2 teaspoons baking powder
2 teaspoons sugar
1/4 teaspoon salt
1/4 cup cooked, mashed Sweet-Potato
1/4 cup milk (1/4 to 1/3)
Method
Preheat oven to 400 degrees.
Grease baking sheets or line with parchment paper.
Sift together flour, baking powder, sugar, and salt; cut in shortening with a pastry blender or fork, until mixture resembles coarse meal.
Stir in Sweet-Potato and milk, mixing just until all dry ingredients are moistened.
Drop remaining dough by spoonfuls onto baking sheet; or, roll out 1/2-inch thick and cut with a biscuit cutter.
Bake 12 to 15 minutes, until light brown.
Makes six to eight.
