Ingredients
Yield: about 4 cups (255g) (about 2/3 cup/40g per serving)
- 1 cup (60g) unsweetened coconut flakes
- 1 cup (120g) chopped raw pecans
- ½ cup (60g) raw pepitas (pumpkin seeds)
- ¼ cup (30g) cacao nibs
- ¼ cup (7g) freeze-dried raspberries or strawberries (optional)
Method
- Preheat the oven to 300°F (150°C)
- Spread the coconut, pecans, and pepitas on a rimmed baking sheet and toast in the oven for 10 minutes, until the coconut flakes turn a light golden brown
- Remove from the oven and let cool completely before mixing in the cacao nibs and freeze-dried berries
- Keep in a tightly sealed jar at room temperature for up to a week
