Easy Keto Trail Mix Recipe

Ingredients

Yield: about 4 cups (255g) (about 2/3 cup/40g per serving)

  • 1 cup (60g) unsweetened coconut flakes
  • 1 cup (120g) chopped raw pecans
  • ½ cup (60g) raw pepitas (pumpkin seeds)
  • ¼ cup (30g) cacao nibs
  • ¼ cup (7g) freeze-dried raspberries or strawberries (optional)

Method

  1. Preheat the oven to 300°F (150°C)
  2. Spread the coconut, pecans, and pepitas on a rimmed baking sheet and toast in the oven for 10 minutes, until the coconut flakes turn a light golden brown
  3. Remove from the oven and let cool completely before mixing in the cacao nibs and freeze-dried berries
  4. Keep in a tightly sealed jar at room temperature for up to a week
