  • 1 pound skinless pork belly
  • himalayan salt and freshly ground black pepper, to taste
  • 1 teaspoon dried parsley
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 2 cloves garlic, pressed
  • 1/2 cup shallots, sliced
  • 1 red bell pepper, seeded and sliced
  • 1 green bell pepper, seeded and sliced

Method

  1. Poke holes all over the pork with a fork.
  2. Rub the seasonings all over the pork belly.
  3. Place the pork in a lightly greased baking pan.
  4. Top with garlic, shallots, and peppers.
  5. Transfer the pork belly to the preheated oven.
  6. Bake at 390 degrees F for about 18 minutes.
  7. Serve warm.
