Ingredients
Serves: 10.
- 1/3 cup mascarpone cheese
- 1/3 cup unsweetened coconut flakes
- 1/3 cup coarsely chopped walnuts and/or pecans
- 1 tablespoon Truvia
Coating:
- 4 tablespoons butter
- 2 tablespoons heavy white cream
- 2 tablespoons unsweetened cocoa
- 2 tablespoons Truvia
Method
- In a medium bowl, mix the mascarpone, coconut flakes, nuts and sweetener together.
- Mix well and shape the mixture into small balls.
- Place on a plate lined with parchment and place in the fridge.
- Meanwhile, prepare the coating.
- Combine the butter and heavy cream in a bowl and microwave for 30-35 seconds, stirring once halfway through.
- Stir in the sweetener and cocoa and mix until well combined.
- Remove the chilled balls from the fridge and thoroughly coat with the prepared cocoa mixture.
- Return back to the fridge and let them chill for another 15-20 minutes.
- Keep stored in the refrigerator.
