Ingredients
- 3 tablespoons (40 g) polyol sweetener
- 80 ml boiling water
- 2 cups (140 g) shredded coconut meat
Method
- In a medium-size mixing bowl, dissolve the polyol sweetener in water
- Stir in the coconut, making sure the coconut is evenly damp
- Cover the bowl and let it sit for 10 to 15 minutes
Makes 2 cups (180 g), or 16 servings of 2 tablespoons each
- Each with trace protein; 2 g carbohydrate; 1 g dietary fiber; 1 g usable carb
- Carb count does not include polyol sweetener
