Keto Broccoli Salad Recipe

Ingredients

  • 1/2 cup (120 ml) olive oil
  • 1/4 cup (60 ml) vinegar
  • 1 clove garlic, crushed
  • 1/2 teaspoon Italian seasoning herb blend
  • 1/2 teaspoon salt
  • -to taste- pepper cups (1 kg) frozen broccoli cuts

Method

  1. Whisk the olive oil, vinegar, garlic, herbs, salt, and pepper together
  2. Don’t even bother to thaw the broccoli-just put it in a bowl and pour the olive oil mixture on top of it
  3. Mix well and let it sit for several hours in the fridge
  4. Stir it now and then if you think of it and serve as-is or on greens

Makes 6 servings

  1. Each with 7 grams of carbohydrates and 4 grams of fiber, for a total of 3 grams of usable carbs and 4 grams of protein
