Chicken Picata Italian Recipe

Ingredients

  • 2 boned, skinned chicken
  • breast
  • 1/2 cup dry white wine
  • 1 juice of 1 lemon
  • oil
  • 1/2 pound sliced mushrooms
  • flour, salt, pepper

Method

  1. Pound chicken breasts to about 1/4″ thickness
  2. Dredge in flour, salt and pepper
  3. Fry quickly in oil
  4. Saute sliced mushrooms in same pan
  5. Add juice of one lemon and the white wine
  6. Boil down to about 1/2, then add back the chicken and heat until chicken is warm
