Ingredients

- 1 to 1 1/2 teaspoons salt
- 1 teaspoon garlic granules or 1 teaspoon garlic paste
- 1/4 to 1/2 teaspoon cayenne
- 1 teaspoon Garam Masala
- 2 1/2 cups chopped green beans (1 to 2-inch pieces)
THE TEMPERING:
- 1 teaspoon safflower or other neutral oil
- 1 teaspoon cumin seeds
- 1 large onion, chopped (1 cup)
- 1/8 teaspoon asafetida (omit to make gluten-free)
- 1 hot green chile, finely chopped (Serrano or birds eye) 4 cloves garlic, finely chopped
- 2 tablespoons chopped cilantro, for garnish
- 1 teaspoon lemon juice, for garnish
- 2 teaspoons sesame seeds, for garnish
Method
- Combine the lentils in a saucepan with 3 1/2 cups of water
- Partially cover, and cook over medium heat for 20 minutes
- The liquid will come to a boil around 5 to 6 minutes
- If the water threatens to boil over, partially uncover
- Add the salt, garlic, cayenne, garam masala, and green beans
- Mix, cover, and cook until the lentils are tender, about 15 minutes, stirring once in between
- If the lentils look like they are drying out too much, add 1/2 cup more water
- Reduce heat to low
- The tempering: Heat the oil in a small skillet over medium heat
- When the oil is hot, add the cumin seeds and cook for 30 seconds
- Stir in the onions, asafetida, chile, and garlic, and cook until golden, 5 to 6 minutes.
- Add the onion mixture to the simmering lentils.
- Mix well and let sit for 5 minutes to infuse the flavors.
- Garnish with cilantro, a dash of lemon juice, and sesame seeds
