Ingredients

- 1 teaspoon safflower or other neutral oil
- 4 cloves garlic, minced or 2 tablespoons garlic paste
- 1/2 teaspoon Garam Masala
- 1/2 teaspoon ground coriander
- 1/2 to 1 green chile, chopped (remove seeds to reduce heat) 1/4 cup chopped cilantro
- 1/2 teaspoon dried fenugreek leaves or 1/4 cup chopped fresh fenugeek leaves
- 1/4 to 1/2 teaspoon red pepper flakes
- 3 medium tomatoes, chopped (2 1/4 cups)
- 4 ounces button or baby bella mushrooms, sliced (1 1/2 to 2 cups)
- 2 cups packed baby greens, such as baby spinach, chard, or kale
- 2 tablespoons or more water
- 1/2 teaspoon salt
- 2 tablespoons chopped cilantro, for garnish
Method
- Heat the oil in a large skillet over medium high heat
- Add the garlic, garam masala, and coriander
- Stir frequently and cook until the garlic becomes fragrant and golden, 2 minutes
- Add the green chile, cilantro, fenugreek, and red pepper flakes
- Mix well and cook for 1 minute
- Add the tomatoes, mix well, and cook until they are saucy and shimmery, 5 to 6 minutes, stirring occasionally
- Add the mushrooms, greens, 2 tablespoons water, and salt
- Mix well and cook until the mushrooms are tender, 5 to 7 minutes
- You can also reduce the heat to medium and cook longer for well-cooked mushrooms
- Serve hot, garnished with cilantro, along with flatbread or rice
