Ingredients
- recipe for : Nepali Aloo
- 1 tablespoon safflower or other oil
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 8 cloves garlic, thinly sliced
- 1 (3-inch) knob of ginger, julienne
- 3 green chiles, thinly sliced (remove seeds to reduce heat) 1/2 teaspoon ground turmeric
- 2 to 3 teaspoons white vinegar or apple cider vinegar
- 3 1/2 cups precooked potato wedges (4 medium potatoes)
- 3/4 to 1 teaspoon salt
Method
- Heat the oil in a large skillet over medium heat
- When hot, add the mustard seeds and cumin seeds
- Cook until they start to pop, about 1 minute
- Add the garlic, ginger, and chile and cook until the garlic is golden, 2 minutes
- Reduce heat to low
- Stir in the turmeric and vinegar
- Add the cooked potatoes and salt and mix well
- Cover and cook for 5 minutes
- Serve hot
