Ingredients

- 1 1/2 cups chopped red onion
- 1 to 2 hot green chiles (remove seeds to reduce heat)
- 3 tablespoons dry shredded coconut
- 3 tablespoons raw cashews
- 2 tablespoon sesame seeds
- 1 (1-inch) knob of ginger
- 4 cloves garlic
- 1/2 cup water
- 2 teaspoons safflower or other neutral oil
- 1/3 teaspoon cumin seeds
- 3/4 teaspoon black mustard seeds
- 1 (2-inch) cinnamon stick
- 6 cloves
- 4 cups cauliflower florets
- 1 cup lightly packed cilantro, leaves and tender stems, finely chopped
- 3 tablespoons finely chopped mint leaves
- 1/2 cup petite yellow lentils (mung dal) or red lentils (masoor dal), soaked for 15 minutes
- 1 cup coconut milk
- 1 cup water
- 1 to 1 1/2 teaspoons salt
Method
- In a blender, combine the onion, chile, coconut, cashews, sesame seeds, ginger, garlic, and 1/2 cup water, and blend until smooth
- Set aside
- Heat the oil in a large skillet over medium heat
- Once hot, add the cumin, mustard seeds, cinnamon stick, and cloves, and cook for 1 minute.
- Add the blended onion mixture and cook until the mixture thickens, starts to leave the side of the pan, and does not smell raw, 17 to 19 minutes.
- Stir occasionally.
- Add the cauliflower, cilantro, and mint and mix well
- Add the lentils, coconut milk, water, and salt, and mix well
- Cover and cook for 10 minutes over medium heat
- Reduce the heat to medium-low and cook until the lentils are tender, the cauliflower is cooked through, and the curry thickens, about 15 minutes
- Taste, and adjust salt and spice
- Serve hot
