Ingredients
- Serves: 6
- 1 1/2 lbs chicken thighs, boneless, skinless and cut into pieces
- 1 lb potatoes, diced
- 1 medium onion, diced
- 13.5 oz can coconut milk
- 2 tbsp brown sugar
- 1 tsp ground turmeric
- 1 tsp curry powder
- 2 tsp garlic, minced
- 1 tbsp fresh ginger, minced
- 1/2 tsp ground coriander seed
- 1/2 tsp red pepper
- 1 tsp kosher salt
Method
- Add all ingredients into the slow cooker and stir well.
- Cover and cook on low for 4 hours.
- Serve and enjoy.
