Ingredients
- Serves: 6
- 3 chicken breasts, skinless and boneless
- 1 tbsp lime juice
- 2 tbsp cornstarch
- 3 garlic cloves, minced
- 1 tbsp ginger, minced
- 1 tbsp rice wine vinegar
- 2 tbsp honey
- 2 tbsp soy sauce
- 1/3 cup creamy peanut butter
- 1 cup coconut milk
Method
- Add all ingredients except lime juice and cornstarch into the slow cooker and mix well.
- Cover and cook on low for 4 hours.
- Whisk together cornstarch and 2 tbsp water and pour into the slow cooker.
- Stir well and cook for another 20 minutes until gravy thickens.
- Serve and enjoy.
