Ingredients
- Serves: 4
- 2 cups dry red beans, soak for overnight
- 2 tbsp cilantro, chopped
- 1 cup tomato sauce
- 1 cinnamon stick
- 1/4 tsp turmeric
- 1/4 tsp cayenne pepper
- 1/4 tsp ground coriander
- 1 tbsp lemon juice
- 4 garlic cloves, minced
- 1 tsp ginger, minced
- 1 medium onion, chopped
- 1 tsp cumin seeds
- 1 bay leaf
- 1 tbsp vegetable oil
- 1 1/2 tsp salt
Method
- Heat oil in the pan over medium heat.
- Add onion, bay leaf, and cumin seeds into the pan and cook for 5 minutes.
- Add dry spices and lemon juice and stir for 2 minutes.
- Add beans, cinnamon stick, tomato sauce, and salt into the slow cooker.
- Transfer pan mixture into the slow cooker and stir well.
- Cover and cook on high for 4 hours.
- Using spoon lightly mash the red beans it helps to thicken the gravy.
- Garnish with cilantro and serve.
