Healthy Green Lentil Curry Indian Recipe

Ingredients

  • Serves: 6
  • 2 cups green lentils, rinsed and drained
  • 3 cups water
  • 6 oz can tomato paste
  • 14 oz can coconut milk
  • 1 tsp cumin
  • 1 tsp curry powder
  • 1/2 tsp ground coriander
  • 1 tsp turmeric
  • 1 tsp vegetable oil
  • 6 garlic cloves, minced
  • 1 large onion, chopped
  • 1 1/4 tsp salt

Method

  1. Heat oil in the pan over medium heat.
  2. Add garlic and onion to the pan and saute for 5 minutes.
  3. Add cumin, curry powder, coriander, turmeric, and salt and saute for 1 minute.
  4. Transfer pan mixture to the slow cooker with remaining all ingredients.
  5. Stir well.
  6. Cover and cook on low for 6 hours.
  7. Serve warm with rice and enjoy.
