Bang Bang Chicken Recipe

Ingredients

  • 1/3 cup cooking oil
  • 1.5 pounds chicken breast, cubed
  • 1 cup brown or white rice flour
  • 1 cup cornstarch
  • 1 Tablespoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 1 egg, beaten
  • 3/4 cup honey
  • 4 teaspoons minced garlic
  • 3 Tablespoons liquid aminos, or GF soy sauce
  • 1 Tablespoon srirach, or chili paste plus 1/2 teaspoon for the bang bang sauce
  • 2 teaspoons onion powder
  • 1/2 cup plain Greek yogurt
  • 1/4 cup sweet chili sauce

Method

  1. Preheat your oven to 350*F
  2. Place the coconut oil in the bottom of a 9 x 13 baking dish and evenly distribute the oil over the bottom of the dish
  3. In a medium bowl, add the beaten eggs
  4. Set aside
  5. In a large ziploc bag, combine the arrowroot starch, garlic powder, salt and pepper and mix well
  6. In another large ziploc bag, pour in the rice flour
  7. Set these two bags aside
  8. Dip the cubed chicken pieces into the egg and allow the excess to drip off
  9. Then place the chicken pieces into the bag with the rice flour, zip the bag up tightly, shake the contents until evenly covered in the flour and then remove and place the pieces inside the bag with the arrowroot starch mixture and do the same shaking technique as before
  10. Place the coated chicken pieces into the baking dish and bake for 45 minutes, stirring every 15 minutes to allow the chicken to cook and crisp evenly
  11. While the chicken is baking, combine all of the sticky glaze sauce ingredients together, the honey, minced garlic, liquid aminos, 1 Tablespoon sriracha, and 2 teaspoons onion powder together in a medium bowl
  12. Once the 45 minutes is up, pour the sauce overtop the chicken and stir to make sure that the chicken pieces are entirely covered in the sauce
  13. Place any chopped vegetables you would like cooked with the dish into the baking dish and stir
  14. Cook for another 5-10 minutes or until the chicken is fully cooked and the glaze starts to thicken and turn into a shiny thickened glaze
  15. While the glaze is thickening, you can make the bang bang sauce by combining the Greek yogurt, 1/4 cup sweet chili sauce, and 1/2 teaspoon sriracha sauce together and stir until well combined
  16. Remove from oven, allow to cool for 3-4 minutes, drizzle the bang bang sauce over the chicken, and serve while still warm
  17. The glaze on the chicken will thicken slightly more while cooling
