Ingredients
Makes : 3 dozen
- 1/2 cup unsweetened applesauce
- 1 tablespoon ground flax seeds
- 1/3 cup brown sugar
- 1 teaspoon vanilla extract
- 3/4 cup spelt flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon ground ginger
- 1 pinch of nutmeg
- 1/2 teaspoon ground cloves
- 1 1/3 cups rolled oats
- 1/2 cup golden raisins
- 1 pinch of salt
Method
- In a large bowl, mix together the applesauce and flax seeds and allow to sit for 5 minutes
- Add the sugar and salt, mixing well, then stir in the vanilla
- In another bowl, sift the flour with baking soda, baking powder, cinnamon, ginger, nutmeg and ground cloves then add the rolled oats
- Combine the two mixtures then fold in the golden raisins
- Drop spoonfuls of this batter onto the greased baking trays
- Bake in a preheated oven at 350F for 15-20 minutes or until slightly golden brown on the edges
- Store in an airtight container until serving
