Ingredients
Servings : 12 muffins.
- 1¾ cups oat flour
- 1 pinch salt
- 1 teaspoon baking soda
- ½ teaspoon cinnamon powder
- ½ cup agave syrup
- 1 cup silken tofu
- 1 teaspoon vanilla extract
- ¼ cup coconut oil, melted
- 2 tablespoons ground flax seeds
- 8 plums, pitted and diced
Method
- Mix the oat flour with the salt, baking soda and cinnamon and set aside
- In a blender, combine the silken tofu with the agave syrup, vanilla extract, coconut oil, and flax seeds
- Pour this mixture over the dry ingredients and mix well
- Fold in the plums then spoon the batter into your muffin cups lined with muffin papers and bake in a preheated oven at 350°F for 25 minutes or until risen and golden brown
