Ingredients
Servings : 12 muffins.
- 1 cup whole wheat flour
- ½ cup all-purpose flour
- 1 teaspoon baking soda
- 1 pinch salt
- 1 pinch ground ginger
- 1 small melon, peeled and cubed
- ¼ cup agave syrup
- 1 teaspoon vanilla extract
- ¼ cup coconut oil
Method
- Mix the melon with the agave syrup, vanilla and coconut oil in a blender
- Puree until smooth and then stir in the flours, baking soda, salt, and ginger
- Spoon the batter into your muffin cups lined with muffin papers and bake in a preheated oven at 350°F for 25 minutes or until the surface turns golden brown
