Ingredients
Servings : 4-6 dishes.
- 3 ripe bananas, mashed
- 1 teaspoon lemon juice
- 1/2 cup soy milk
- 1 teaspoon vanilla extract
- 1/3 cup agave nectar
- 1/4 cup sugar
- 2 cups whole wheat flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup fresh blueberries
- 1 pinch of salt
Method
- Grease a 9 inch round cake pan and set aside
- In a bowl, mix the soy milk with the lemon juice and let it sit for 5 minutes
- Stir in the bananas and agave nectar and sugar and mix well
- In another bowl, mix the flour with the baking powder, salt and baking soda
- Pour in the banana mixture and give it a good mix
- Fold in the blueberries and pour the batter into the prepared pan
- Bake the cake in a preheated oven at 350F for 40-50 minutes
- Let it cool in the pan then transfer to a serving plate and sprinkle with powdered sugar
