Ingredients
Servings : 4-6 dishes.
- 1/2 cup coconut flour
- 4 tablespoons flax seeds, ground
- 8 tablespoons water
- 1/4 cup coconut milk
- 1/4 cup coconut oil
- 1/2 cup brown sugar
- 1 teaspoon orange zest
- 1 pinch of salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 4 tablespoons orange juice
- 1 pinch of salt
Method
- In a bowl, mix together the flax seeds with water and set aside for 5 minutes
- Stir in the sugar, vanilla, orange zest and juice
- Add the coconut oil, melted and chilled, then incorporate the coconut flour, baking powder and baking soda, as well as a pinch of salt
- Pour the batter into a greased 9-inch cake pan and bake in a preheated oven at 350F for 30-40 minutes
- Let cool in the pan then sprinkle with powdered sugar and serve cut into slices 23
