Cheesy Eggplant Casserole Recipe

Ingredients

  • 1 medium eggplant
  • 3/4 cup soft breadcrumbs
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup milk (at room temperature)
  • 2 teaspoons grated onion
  • 1 tablespoon catsup
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • Dash of cayenne
  • 1/2 teaspoon Worcestershire sauce 6 ounces American or Cheddar cheese,
  • cut into small pieces
  • 2 eggs, slightly beaten (at room temperature )

Method

  1. Preheat oven to 350 degrees F
  2. Butter a 1 1/2-quart casserole dish
  3. Peel and dice eggplant
  4. Steam or saute until tender
  5. Toss with breadcrumbs in a large bowl
  6. Melt butter in a medium saucepan; stir in flour
  7. Add milk; cook and stir until thickened
  8. Stir in onion, catsup and seasonings
  9. Add cheese; cook and stir until melted
  10. Add eggs to sauce, stirring constantly
  11. Combine sauce with eggplant mixture
  12. Transfer to prepared dish; bake 45 minutes
