Ingredients
SERVES 2.
- 1 cup broccoli florets
- 1 cup quartered Brussels sprouts
- 1/2 cup cauliflower florets
- 1/4 medium white onion, peeled and sliced 1/4 thick
- 1/2 medium green bell pepper, seeded and sliced 1/4 thick
- 1 tablespoon coconut oil
- 2 teaspoons chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
Method
- Toss all ingredients together in a large bowl until vegetables are fully coated with oil and seasoning
- Pour vegetables into the air fryer basket
- Adjust the temperature to 360°F and set the timer for 15 minutes
- Shake two or three times during cooking
- Serve warm
